What you need to buy: corn flakes (I buy a small box at the grocery store from cereal aisle), 1 egg, rosemary, all purpose seasoning, and four chicken breast.
Whenever you're cooking chicken it's best to use a tenderizer. You can buy this at any grocery store, bed bath and beyond etc. I always use this for my chicken because my Husband complains that it's too thick if I don't...
Preheat your over to 350
Wash your chicken! Slightly beat one egg in a bowl. Crush 1 cup on corn flakes in another bowl. dip chicken into egg batter, season with rosemary & all purpose seasoning and stick in bowl of corn flakes. smash it around in corn flakes until it's covered. You need to apply a little pressure to the chicken in the corn flakes to make sure they stick well. Place the chicken in baking dish. Do not cover. Cook at 350 for 30 minutes. You don't want to cook it much longer than this because it won't be as juicy.
I like to serve this with twice bakes potato's, and creamy spinach :) Yum!

Turkey Burgers (Cooked on the stove top)
You need: 1 lb of ground turkey, 1 tsp on Worcestershire sauce, one package of dry onion soup, salt & pepper.
Combine all igredients in large mixing bowl. Mix together with your hands (after you wash them of course;) and make burger shapes out of the meat. I recomend making them smaller than larger, since it takes longer to cook the inside of a larger ball. Spray cooking spray to your pan and place burgers in pan at a medium to low heat. Cook until temperature desired , and serve on a kaiser roll. The kaiser is just my preference, but you can use a normal hamburger bun if you like..I usually serve this with a veggie and tater tots. Yes I said tater tots. The pre-seasoned kind are THE BEST. If you want to be healthier you can lose the bun/roll and have a side of veggies. Not as yummy, but less fattening ;)

dumplings (as promised)
two eggs lightly beaten in a bow, 1 1/2 cup of all purpose flower, 1/2 cup of milk
Mix together with a fork. It's very messy at first, but when isn't cooking messy?
You want the consistency to be like pancake mix, but not as wet. If you have a wet mess, add a touch more flower.
Pick up clumps of mixture and let them fall off from your fingers into boiling water (soup) and let them cook & rise to the top of the water. They rise to the top once they are done, and will continue to get larger as they sit in the water (regardless of boiling or not) you want them to be somewhat tough byt not gooey OR hard. Waiting to hear how my first batch turns out :)~

- 1 tablespoon olive oil
- 1 medium onion, diced (about 1 1/2 cups)
- 2 cloves garlic, minced (about 2 teaspoons)
- 2 (14.5-ounce) cans of no-salt-added diced tomatoes, with their juices
- 1/4 cup finely minced fresh flat-leaf parsley
- 1 tablespoon finely minced fresh dill
- 1 1/4 pounds medium shrimp, peeled and deveined
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2/3 cup crumbled feta cheese (about 3 ounces)
Directions
Preheat the oven to 425 degrees F.
Heat the oil in an oven proof skillet over a medium-high heat. Add the onion and cook, stirring, until softened, about 3 minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken.
Remove from the heat. Stir in the parsley, dill, and shrimp and season with salt and pepper. Sprinkle the feta over the top. Bake until the shrimp are cooked through and cheese melts, about 12 minutes.

aunt liz's potato soup
I used my Mom's recipe to put together a delicious and full of love, potato soup. It consists of: celery, bacon, 5 lbs of potatos, cream of potatos soup, veggie broth, salt & pepper of course...OH YEAH, I made homemade dumplings for the first time too! How exciting right?!?! (dumpling recipe to follow)
Not much prep involved but you DEFINITELY need a potato peeler if you're going to get involved. Peeling with a knife is NO bueno ;) This is a nice recipe to cook around this time of year since it's warm and we actually have chili weather at the moment...

welcome part II
ok so I'm told I'm not being personal enough..here goes. I love, love, love cooking. I like cooking fast, cleaning the whole way through and cooking multiple recipes all at once! I can't get enough and it never bores me. It's the only time I feel artistic....it's can be exhilarating!!!

So I'm not new to cooking as I've been doing it most of my life. I am new to blogging... I love to use fresh ingredients and I am very passionate about food. I want a food blog so that I can chronicle my culinary adventures, whether phenomenal or disastrous.
